Take 3 or 4 stalks of rhubarb cut into 1 inch pieces

2 cups of sugar

3 cups of water

Add ingredients to a saucepan, combine & bring to a boil. Reduce to a simmer & let simmer for about 15 minutes. Strain using a fine mesh strainer into a heat safe jar or dish to cool. Be sure to press on rhubarb to release extra juices. Once cooled, reserve in a container and store, refrigerated for up to a week. You can add strawberries or orange zest to the recipe for added fun!

Fun cocktails you can make with it:

3/4 ounce gin

3/4 ounce lemon juice

3/4 ounce rhubarb simple

shake with ice, strain into a cocktail glass with no ice, top with sparkling wineÂ

2 ounce bourbon or rye

1 ounce lemon juice

3/4 ounce rhubarb simple

White from one egg (optional)

Add ingredients to a shaker and shake without ice for 10 seconds, add ice and shake again for another 10 seconds. Strain into cocktail glass over ice.

1 1/2 ounce vodka

3/4 ounce lime juice

3/4 ounce rhubarb simple

shake ingredients and strain into a cocktail glass with no iceÂ

1 ounce lime juice

1 ounce rhubarb simple

1tsp grated ginger

shake over ice and strain into a glass with ice, top with tonic, soda water or ginger beer.
